Upgraded Sweet ‘tater Fries

Sweet potatos – dontcha just love ’em?  Baked, twice-baked, mashed, in-a-pie or in-a-pudding.  And when I discovered sweet potato fries in my grocers’ freezer section awhile back…yupper – I was hooked!

But last Christmas when my eldest son and his wonderful wife were over, Julia introduced me to her version of ’em.  Now I have to preface this to say that while she is still a young married woman…she is a great cook!  Obviously, her mama didn’t waste any of their time together in the kitchen.  I had some of these tuberous treats hanging around, and she offered to handle that part of the meal.  In a snap she had these goodies good-to-go…and they sure went wildly fast at the table!

 

Ingredients
Sweet potatoes
garlic salt
olive oil
Parmesan cheese

Directions (such as they are)
Scrub ’em clean and cut them up in steak-fries-sized pieces.  Drizzle some olive oil in the bottom of a glass 13X9 baking pan. Spread out the fries and drizzle a bit more oil over the top (don’t go crazy, tho!) and then sprinkle with garlic salt (or just use salt and pepper if you’re not a garlic fan).  Bake at 400*F for about 25 mins.  Test to see if they’re softer and “close” to ready.  Sprinkle generously with the Parmesan and put back in the oven for about 5-10 mins.

Take them out, enjoy the smell as your kitchen fills up with its fabulous fragrance, and enjoy!
